< style="margin: 0;">Bodega San Valero has been making wine in Cariñena since 1944 — the oldest winery in the appellation, one of the oldest in Spain. Their organic line, Bodega Verde, launched in 2019 after nearly a decade of converting parcels: vineyards at 850 meters elevation in Almonacid de la Sierra, with arid soils and the Cierzo wind doing much of the pest management work naturally.
The Macabeo is hand-harvested at night in late August to preserve aromatics, then cold-macerated six hours and fermented in stainless steel. Twenty-one days on the lees add texture; natural settling and a year of bottle age follow before release. No oak, no shortcuts — what comes through is the Cariñena plateau: stony, citrus-bright, faintly honeyed, clean on the finish.
